After School Leaders student

Are you a budding culinarian looking to take your food prep to the next level? Are you thinking about gaining skills to make you more employable? Join Red River College Polytechnic’s tuition-free Culinary Arts program for teens!

This program will focus on introducing youth aged 14-18 to professional culinary arts through study and application of basic principles and fundamental techniques, including food safety, purchasing, menu planning and budgeting, and service.

The program will be delivered in person at the Paterson GlobalFoods Institute, part of RRC Polytech’s Exchange District Campus.

Dates and Times

Classes run Tuesdays and Thursdays from 4:30pm to 7:30pm, starting March 5, 2024 and ending May 30, 2024.

Classes do not run during Spring Break (the week of March 25 to March 29).

Topics and Deliverables

You will learn basics of the Culinary Arts, covering topics such as:

  • Measurements
  • Knife skills
  • Food safety
  • Menu planning
  • Budgeting and shopping

By the end of this program, you will have completed:

  • WHMIS training
  • Food Handler’s exam
  • Basic introduction to culinary terminology and technique
  • Skills to follow recipes
  • Fluency in measurements
  • Basic knife skills

The final project will involve demonstrating an understanding of planning and executing a menu, from writing the grocery list to completing the meal service.

Requirements

Students are required to have an Internet-connected device — preferably a tablet or laptop — in order to write their Food Handler’s exam.

Instructor

Winnipeg-based author and RRC Polytech alumnus Chef Lorena Villalobos will work with you to improve your culinary skill levels, while applying knowledge immediately to group projects, and taking time to explore career opportunities.
