Whipped Dressing (Mayonnaise)

2 egg yolks
1.5 cups canola oil
1 tsp Dijon mustard
½ lemon, juiced
Salt & Pepper to taste
Place egg yolks in a medium-sized mixing bowl. Add the mustard to the yolk, and slowly whisk the oil into the yolk mixture. The dressing should thicken as the oil is added. Once all the oil has been added, adjust the seasoning with salt, pepper, and lemon juice.
- Spicy: add 2 tbsp sriracha for a dressing or dip with some zip!
- Herb: add chopped dill, parsley, and diced sweet pickles for a great fish condiment.
- Mediterranean: add 1 clove minced garlic, 2 tbsp tahini paste, 2 tbsp sesame seeds, and chopped parsley for a refreshing dip.
